Plant-Based BBQ: BBQ Jackfruit Sliders with Coleslaw

 

4th of July is almost here, and that typically means things like hot dogs, hamburgers and lots of chips, soda and other junk foods! Everyone can indulge a little during the holiday, but making plant-based versions of some nostalgic summer dishes is easy and delicious. Consider swapping out some animal products meals with healthier ones with these easy substitutions:

 

  • Marinated and grilled carrots instead of hot dogs

  • Black bean and sweet potato OR chickpea  beet burgers instead of beef burgers

  • Pasta salad with extra veggies

  • Vegetable/tofu grilled skewers

 

Our favorite summer dish is a healthy spin on pulled pork sliders with coleslaw, that no one will ever believe is meat-free and dairy-free! Jackfruit is a common, flavorless fruit with a pull-apart consistency that mimics pulled pork or shredded meat. With BBQ or buffalo marinade it is easily disguised and super delicious!

 

BBQ JACKFRUIT

 

16 oz young green jackfruit, drained

3 tbsp organic ketchup

3 tbsp coconut or brown sugar

1 tbsp molasses

1 tsp apple cider vinegar

1 tsp hot sauce

1 tsp paprika

1 tsp sea salt

½ tsp chili powder

½ tsp cumin

 

  • Chop off hard cores of jackfruit pieces and then press the rest of it with a fork so that it mashes into pieces that fall apart

  • Add jackfruit to a saute pan with a little oil over medium heat

  • Stir together ketchup, sugar, molasses, vinegar, hot sauce, paprika, chili powder, cumin and salt

  • Pour over jackfruit and continue stirring over medium heat for 8-10 minutes or until sauce is completely absorbed and jackfruit has browned

 

CREAMY COLESLAW

 

1 cup shredded red and green cabbage

½ cup shredded carrots

⅓ cup chopped green onions

¼ cup chopped cilantro

½ cup raw cashews, soaked

¼ cup water

1 garlic clove, chopped

Sea salt and black pepper

 

 

 

  • Toss together cabbage, carrots, green onions and cilantro

  • In a blender, blend cashews, water, garlic, salt and pepper until creamy, then pour over cabbage mix

  • Serve on buns over BBQ jackfruit
